What a perfect way to use Scott’s Nutz! Using the smoky flavor of Scott’s pistachios as a crispy coating for fish offers a gourmet twist on any breaded fish recipe. Perfect for a weeknight dinner or a special occasion, this recipe is easy to prepare and guaranteed to impress your family and friends. Serve it alongside fresh vegetables or a simple salad for a complete and satisfying meal.
Ingredients:
- 4 fish fillets (we prefer salmon, but white fish such as rockfish, tilapia, or cod would work as perfectly well)
- 1 cup Scott’s Smoked Pistachios (any flavor), shelled and finely chopped
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- Olive oil or cooking spray
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the chopped smoked pistachios, panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with the smoked pistachio breadcrumb mixture.
- Pat the fish fillets dry with paper towels. Season both sides with salt and pepper.
- Dredge each fillet in the flour, shaking off any excess. Dip into the beaten eggs, then coat thoroughly with the smoked pistachio breadcrumb mixture, pressing lightly to adhere.
