What a perfect way to use Scott’s Nutz! Using the smoky flavor of Scott’s pistachios as a crispy coating for fish offers a gourmet twist on any breaded fish recipe. Perfect for a weeknight dinner or a special occasion, this recipe is easy to prepare and guaranteed to impress your family and friends. Serve it alongside fresh vegetables or a simple salad for a complete and satisfying meal.

Ingredients:

  • 4 fish fillets (we prefer salmon, but white fish such as rockfish, tilapia, or cod would work as perfectly well)
  • 1 cup Scott’s Smoked Pistachios (any flavor), shelled and finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • Olive oil or cooking spray

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the chopped smoked pistachios, panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with the smoked pistachio breadcrumb mixture.
  4. Pat the fish fillets dry with paper towels. Season both sides with salt and pepper.
  5. Dredge each fillet in the flour, shaking off any excess. Dip into the beaten eggs, then coat thoroughly with the smoked pistachio breadcrumb mixture, pressing lightly to adhere.
  6. Place the breaded fillets on the prepared baking sheet. Lightly drizzle with olive oil or spray with cooking spray to help with browning.
  7. Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden and crispy. Cooking time may vary depending on the thickness of the fillets.
  8. Remove from the oven and let rest for a couple of minutes before serving.
