Transform your pasta night with this flavorful Smoked Pistachio Pesto Pasta. Ingredients:

  • 1 cup Scott’s Smoked Salt & Pepper pistachios, removed from shell
  • 1 bunch fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1 pound pasta (such as spaghetti or penne)
  • 1/2 cup cherry tomatoes, halved (optional)
  • Fresh basil leaves and balsamic vinegar for garnish

Instructions:

  1. In a food processor, combine the shelled pistachios, basil, Parmesan cheese, and garlic. Pulse until finely chopped.
  2. With the food processor running, slowly add the olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste.
  3. Cook the pasta according to package instructions. Drain and reserve 1/2 cup of the pasta cooking water.
  4. In a large bowl, toss the cooked pasta with the pistachio pesto, adding reserved pasta water as needed to reach desired consistency.
  5. If using, add the cherry tomatoes and toss gently to combine.

Serve the pasta garnished with fresh basil leaves, a drizzle of balsamic vinegar, and additional grated Parmesan if desired.
